Pesto Penne Pasta with Shrimp



Penne Pasta (1/2 box cooked to instructions on box)

1 lb raw shrimp

2-3 Heaping cups fresh basil

1/2 cup pine nuts 

2 Tablespoons nutritional yeast

3 Tablespoons chopped shallots

2 Tablespoons extra virgin olive oil

Salt and  pepper

Baby spinach

On-the-vine tomatoes

Fresh lemon juice



In iron skillet, heat olive oil and add shallots and salt and pepper and cook shrimp on medium heat  for about ten minutes.

Cook pasta (directions are on package). 

In food processor or blender combine basil, pine nuts, shallots, nutritional yeast, olive oil, salt and pepper. Toss cooked shrimp, into pesto sauce and pasta.

Wash baby spinach and cut tomatoes for salad.  Dress with lemon juice, olive oil and chopped shallots.  About 4 servings
