Vegan Lentil Bolognese (Windham Wellness Retreat Weekend 2022 & 2023)


Ingredients:

1.5 Cups petite French style green lentils cooked according to package instructions

3-4 Carrots (diced)

4-5 Cups coarsely chopped fresh spinach

1 Green zucchini (diced)

1 cup Baby Bella mushrooms (sliced)

1.5 Jars (24oz size) Raos homemade sensitive marinara sauce

1 box brown rice pasta (8 servings)

1-2 T Olive oil

1 Shallot (OR 1 yellow onion) chopped

1-2 T fresh, chopped basil (OR 1 T dried)

2 t oregano

salt to taste

Top with nutritional yeast (OR parmesan cheese for dairy option)

Instructions:

Cook lentils in separate sauce pan.

Add oil to sauté pan over medium heat, add shallots or onions to brown. Add carrots, mushrooms, zucchini, marinara sauce, basil, oregano, salt. Stir and cook for approximately 20-30 minutes.

Add lentils and spinach, lower heat and cook for approximately 10 more minutes.

Cook pasta in separate pan according to package instructions.

Serve over cooked pasta, top with nutritional yeast. Optional: fresh sourdough bread and tossed salad.
