Oven-Roasted Vegetables with Hummus

Ingredients

1/2 head of cauliflower bite sized pieces

4 leaves Lacinato kale chopped 

1/2 red onion chopped

2 Large purple carrots cut into medallion shapes

1 Honey crisp apple chopped

Fresh juice of 1 Lemon 

1/4 cup walnut halves

2 T white balsamic vinegar

2 T tahini

1 T Turmeric

1 tsp black pepper

1-2 T olive oil

Dash of Cayenne Pepper

Pinch of Himalayan salt

Topping:

1 T apple cider vinegar

1/2 cup Roots Hummus

 Instructions:

Preheat oven to 425  

Line baking sheet with parchment paper

Add all ingredients (except the hummus and apple cider vinegar) and toss well.

Place in oven for 30-40 minutes

Remove and put into a serving bowl

Top with hummus

2 meal servings

4 side dish servings
