Kale & Quinoa Salad w/Tahini Lemon Dressing (Windham Wellness Retreat Weekend 2023)


Serves 4 large portions or 8-10 side dish portions

2 C cooked quinoa

1 can rinsed and drained low sodium beans (chickpeas are nice)

2-4 cups chopped fresh baby kale

2 cucumbers diced

1 small red onion diced

½ cup chopped parsley

½ cup mint

½ cup chopped almonds

½ cup crumped goats cheese

Dressing:

¼ C olive oil

1 lemon juice squeezed.

1 T honey

1-2 tsp tahini

Salt & pepper
