Creamy Vegan Brown Rice Pasta



1 green zucchini chopped  

1 yellow zucchini chopped

1 head broccoli cut bite sized tips

1 Lemon 

1 Shallot

1/2 cup cashews

3 T Nutritional yeast

1 cup cooked brown rice pasta

1 T olive oil  

1 cup cannellini beans

Pinch each of Tellicherry Pepper & Himalayan salt

About 4 servings.


Saute' broccoli, zucchini, in olive oil.  

In Nutribullet mix shallots, nutritional yeast, cashews, lemon juice, and about 3/4 cup water.

Add cashew mixture and cannelloni beans to to veggies and simmer for 10-15 minutes.

Cook two servings of brown rice pasta and toss sauce into pasta and serve!
