Mushroom, Lentil, Quinoa & Vegetable Soup



1/2 cup quinoa cooked to package instructions

1/2 cup lentil cooked to package instructions 

1/2 red onion chopped

1 cup cauliflower tips chopped

2 scallions

Fresh juice of 1 Lemon 

1 cup brussel sprouts cut in half

1 cup chopped baby kale

1 cup chopped baby spinach

2 small carrots

1 cup baby bello mushrooms

1 T olive oil

1-2 T apple cider vinegar

Dash of Cayenne Pepper

Pinch of Himalayan salt and Pepper

1 t Thyme

1 t Turmeric

1 t Coriander

1 t Cumin

1 t Oregano

Nutritional yeast

4+ servings.


Cook lentils, set aside.  

Chop onions and scallions - add to large pot to sauté in olive oil

Add Brussel sprouts, cauliflower, carrots, mushrooms

Add apple cider vinegar and lemon juice

Fill pot with water, add spices and dry quinoa

Add kale and spinach and lentils

simmer for an hour

Sprinkle with nutritional yeast
